MICHELIN Guide Türkiye 2026: New Stars, Bib Gourmands, and Green Stars Explored (2026)

The MICHELIN Guide Türkiye 2026 restaurant selections reveal an exciting expansion that brings 18 new establishments from Cappadocia into the lineup. Inspectors were 특히 drawn to the region’s spirit—a warm hospitality, serene landscapes, and a relaxed tempo that invites savoring simple pleasures. This sensibility translates into the food, where honor for tradition and terroir runs deep, and many chefs honor recipes and techniques passed down through generations, delivering flavors that endure and captivate diners today.

Two MICHELIN Stars for Vino Locale
After earning a first Star in İzmir in 2024, Vino Locale rises to Two Stars. Chef Ozan Kumbasar crafts a cuisine that blends Turkish terroir with subtle influences from Thailand, Japan, and beyond. Nestled in a leafy corner just outside İzmir, the restaurant feels inseparably connected to its surroundings. The Kumbasar pair focus on highlighting local, seasonal ingredients, with a menu that moves gracefully between land, sea, and vegetables, always infusing character and identity. Seray Kumbasar’s service and wine pairings further elevate the experience with evident professionalism and warmth.

Vino Locale’s ascent marks İzmir’s first Two-Star recognition and positions it as Türkiye’s second Two-Star restaurant, sharing the honor with TURK FATİH TUTAK.

Three new One-Star restaurants across Türkiye
Three establishments join the One Star cadre this year, each presenting a distinct vision rooted in product, sense of place, and personal identity.

Revithia in Cappadocia draws on nearly forgotten recipes, revived through modern textures and deep flavors. Located within the UNESCO-listed Kayakapı site, the restaurant honors regional traditions—lamb cooked in milk, fermented grains and tarhana, and local condiments—that shape Chef Duran Özdemir’s vibrant, expressive menu.

In Istanbul, Araf, led by Chefs Kenan Çetinkaya and Pınar Korgan Çetinkaya, earns its first Star for a compact, characterful counter restaurant centered around an open fire. The cuisine prioritizes taste, ingredient integrity, and technique, delivering Turkish flavors in their most honest, pure form.

Muğla’s Mezra Yalıkavak, led by Chef Serhat Doğramacı, also earns One Star. Set near Yalıkavak’s outskirts, the restaurant serves a menu anchored in protected Turkish products and ancestral techniques. Surrounded by gardens, livestock, and a working farm, the kitchen blends wood fire, fermentation, grilling, and marinating into thoughtful, elegant compositions, with desserts crafted by the chef’s wife providing a memorable finale.

Together, these new One-Star additions bring Türkiye’s total to 15 exceptional tables.

Bib Gourmand expansion: 16 new entries
The Bib Gourmand category, established by the MICHELIN Guide in 1997, recognizes restaurants delivering excellent food at approachable prices across a wide range of cuisines. The 2026 selection now lists 39 Bib Gourmand venues, with 16 new entries spanning Istanbul, İzmir, Muğla, and Cappadocia. Notable mentions include Kemal’in Yeri Mülkiyeliler Birliği and Partal Kardeşler Balık Restorant, which highlight İzmir’s local traditions and ingredients. In Muğla, Mandalya and Mezegi join as fresh, affordable choices.
Cappadocia contributes five new Bib Gourmands, including Babayan Evi, which also earns a Green Star for generous traditional plates and a deep respect for the land and its products. The wave of new Bib Gourmands reflects a lively landscape where flavor, generosity, and local ingredients converge.

Green Star honorees
The Green Star recognizes restaurants advancing tomorrow’s gastronomy through inspiring, sustainable practices. In 2026, four establishments earned Green Stars: TURK FATİH TUTAK (Istanbul), Orfoz (Muğla), Teruar Urla (Izmir), and Babayan Evi (Cappadocia). These venues embody dynamic, authentic, forward-looking approaches to food.

Three MICHELIN Special Awards
Three Special Awards shine a light on exceptional individuals shaping Türkiye’s dining scene. The MICHELIN Young Chef Award 2026, presented by Jumbo, goes to Duru Akgül of Yakamengen III in Muğla. At 29, her cooking blends regional grounding with international experience, celebrating seasonal produce from local farmers and fisheries. Her blue crab salad with crispy zucchini fritters exemplifies her generous, precise, and flavorful approach.

The MICHELIN Sommelier Award 2026 honors Ersin Topkara of Neolokal in Istanbul, a One Star and Green Star restaurant. His wine program showcases Turkey’s diverse regions, pairing thoughtfully to complement the dishes and tell a broader story of Turkish winemaking.

Ezgi Serdaroğlu receives the MICHELIN Service Award 2026 for Teruar Urla in Izmir. As the dining-room maestro, she orchestrates every moment with professionalism, instinct, and genuine warmth, ensuring a seamless flow between kitchen and dining room and guiding her team with precision and heart.

Selected restaurants rise to 115
With 38 new additions, Türkiye now features 115 MICHELIN Selected restaurants. The overall tone remains warm and authentic, with inspectors repeatedly returning not just for the cuisine, but for the people, the atmosphere, and the generosity that unites all who visit.

From Istanbul’s cosmopolitan energy to İzmir’s terroir heritage, Bodrum’s evolving coastline to Cappadocia’s enduring traditions, the selections showcase a country with a rich and diverse culinary identity. More than 25 cuisines are represented, yet a shared emphasis on tradition and respect threads through every dining room. Whether led by ambitious young chefs or seasoned veterans honoring ancestral recipes, these restaurants reflect a unified philosophy and a commitment to the exceptional ingredients their land provides. Türkiye has earned a lasting place on the gastronomic map, with inspectors savoring every discovery and rediscovery.
